It's no secret: simplicity is bliss, and today's wines typifies this in every way. Each crafted by one of the only female winemakers in the Canary Islands and a staunch advocate of organic farming. Dolores Cabrera creates some of the most bewitching wines on the island, and manages to do so at a price that's unfathomable considering her toil. These wines are singular, delivering the island's complex terroir in layers upon layers of unique flavor. 

While the wines themselves may be the opposite of simple, Dolores prefers to make things in an uncomplicated way. She owns two vineyards of 100+ year old vines and grows only Listàn Negro and Listàn Blanco. From these grapes, she vinifies just three cuvées - a white, a red and a rosé. Her estate La Araucaria is a true labor of love.

Dolores Cabrera is a farm to table kind of woman. To her, it's as simple as the garden she grows right next to her vines. From her squash and potatoes to the grapes for her wines, if it ends up on her table, it should come only from the earth: nothing added, nothing omitted. 

She not only practices organically, but also works to educate farmers around her on organic farming, making it her mission to convert as many people as possible. Additionally working to support women in the wine industry, employing an all female crew for farming and harvesting. Somewhat cheekily, she says that women make better farmers. Her efforts both in the vineyard and outside it are a testament to that.

100% Listan Blanco, hand-harvested, de-stemmed, and macerated on their skins in stainless steel for 20 days before pressing into tank to rest on the lees for 7 months. Bottled without fining or filtering and with no sulfur.

Delicate floral notes are balanced by crisp tropical fruits and a touch of flinty smoke. The palate follows with pretty dried flowers, citrus and fresh acidity, all balanced with a touch of saline minerals and delicate textures. A perfect pairing with fresh garden vegetables, creamy cheeses or fresh seafood. 
'La Araucaria' Rosado 2021 $29.99
100% Listan Negro, hand-harvested, de-stemmed and macerated on their skins for 24 hours before pressing to stainless steel tanks to ferment with native yeasts. The wine rests in tank for 7 months before bottling in the spring.

The nose is full of tart strawberry notes supported by dried violet and a hint of struck match. Salty raspberries on the palate are accented with a pinch of black pepper. While lush this has plenty of zing to serve as an aperitif, it makes the perfect rosé for tacos al pastor and a squeeze of lime.

100% Listan Negro harvested by hand and fermented with whole-clusters in stainless steel. Then further macerated on skins for 7 days before aging in tank for 6 months before bottling without fining or filtering.

Soft, high-toned cherry and raspberry fruit are balanced by a touch of forest floor and wet earth. Red pomegranate and crushed raspberry run over the palate with classic Canary volcanic minerality, all framed by grippy tannins and bright acidity. Perfect for smoked meats and barbecue.
