Today's wine is my go-to bubbly. Simple as that. The type of wine I need to have a cold bottle of in the fridge at all times. It's one of those deceptively simple wines; the kind that overdelivers, outperforms its peers and satisfies to the core. I could go on and on about how it carries the sophistication and class of great Champagne effortlessly, with a brightness and verve which make it irresistible, refreshing and complex all at once.

A blend of Alsace's noble grape varieties and aged on its lees, à la Champange, for over a year creating a sum greater than its parts. This is a brilliant alternative to a top notch Blanc de Blancs and is being offered today for a song. I encourage you to take advantage and stock up. Tucked in the tiny Alsatian village of Scherwiller, on the banks of the Rhine, Yves Dietrich's family has been farming their land since the 1600's. Yet it wasn't until Yves took over the estate from his father that the focus became solely grape growing. He converted the domaine to organic agriculture in 1999, then to biodynamic just 4 years later. These days, all 18.5 hectares of grape production and 6 hectares of cherry and plum trees are certified biodynamic.

Since 2016, Yves' sons have been at the helm, deciding from the outset to bottle everything under their own label, Achillée. Jean is a trained enologist with stints at some of Alsace's most venerable domaines such as 
Ostertag and Deiss. Together they have injected new energy into the estate, creating wines that are pure, traditional and unadulterated tastes of Alsace.
40% Riesling, 15% Pinot Blanc, 15% Auxerrois, 10% Chardonnay, 10% Pinot Noir, 10% Pinot Gris. All hand-harvested from two separate plots. Fermentation is done with indigenous yeasts. The still wine is aged in steel for 9 months before being bottled for secondary fermentation. Then aged in bottle 'sur latte' for 13 months before disgorgment with no added sugar. 

A delightful nose of lemon, crisp apple, chamomile and a touch of toasted brioche. The fine bubbles lend the palate wonderful texture and complement the fresh, pure fruit perfectly. Finishes with concentrated chalky minerality and taut, refreshing acidity. An absolute joy to drink.
