What sets a great wine apart? It's a confluence of many factors, but the most important for me is elegance. This can be hard to describe, nuanced, as it's obviously not a specific flavor or scent. Wines with elegance aren't big, brash or in your face. They aren't obvious. Instead of coming right at you, wines of elegance draw you in. They are beguiling and subtle, revealing themselves bit by bit. 

Nothing epitomizes elegance like the wines of Burgundy and today's Pinot Noir from Paul Pillot is one of 2020's finest examples. If you follow Burgundy closely, you may have heard of this domaine's recent ascent to stardom: it seems Pillot is on the lips of all Burgundy fanatics as of late, and their scarcity reflects this new ravenous following.  

Simply put, this is Pinot Noir at its most finessed; beautifully perfumed with pure, precise fruit, floral aromatics and silky textures.

Domaine Paul Pillot was founded in 1900 by Jean-Baptiste Pillot, a barrel maker by trade who decided to start making his own wine. After World War I ended, his two sons, Henri and Alphonse, starting running the original estate and later acquired even more vineyards. 

Today, the domaine owns 13 hectares, about five of which are red and run by Henri's grandson Thierry, who began working the vines in 1999 before taking over full-time in 2004. Thierry is the 4th generation to take the reins at this storied property.  

Under Thierry the focus has shifted to the vineyards. Farming is organic and he is decidedly hands off in the cellar, dialing back the use of new oak and fermenting only with indigenous yeast. The result are wines of supreme purity, reflecting the hallowed terroirs of Burgundy perfectly.  
From 50+ year old, organically grown vines in Chassagne-Montrachet and Santenay. Hand-harvested, fermented 30% whole cluster with indigenous yeast and aged in used barriques. Bottled un-fined and unfiltered.  

Beautiful and concentrated aromas of cherry, blackberry, baking spices, red flowers and a touch of white pepper. The pure fruited palate has density without heaviness, deftly balancing incredible depth of flavor with bright berry acidity and earthy base notes. I have yet to find a better value red Burgundy.
