With out a doubt, Hiyu is one of the most exciting and original projects happening in wine right now. Co-founded by China Tresemer and former Master Sommelier, Nate Ready, they have spent the last several years building not just a winery or a vineyard, but an entire ecosystem producing incredible fruit, and therefore incredible wines. These are attention-grabbing and idiosyncratic, and they're ushering a new chapter in Oregon Pinot history.

Sourced from their highest, steepest vineyard opposite Mt. Hood, which is singled out for its incredible altitude coupled with warm southern exposure. There's a wild, alpine feel to this wine that I've never experienced in Pinot before, displaying dark forest berries, spice and pine needle, it's almost Côte Rôtie-like. Without a doubt one of the most unique and wondrous wines I've tasted this year.

The biodynamically farmed Pinot Noir is hand harvested and fermented with whole-berries, then aged for two years in small, used French oak barrels. All wines from Hiyu are bottled by gravity un-fined and unfiltered. 

A striking, lifted bouquet of wild blackberries, creme de cassis, sweet pepper, forest floor, eucalyptus and violet. The palate is awash in dark fruit: jammy blackberries, black cherries and blueberries with an almost meaty edge, yet it remains high-toned with fresh acidity and elegantly framed tannins. A wine with incredible length, purity and depth. 
Started by sommelier Nate Ready, of French Laundry fame, and China Tresemer, the brain behind their experimental farming methods, Hiyu farm has become a beacon for many exploring new possibilities in winemaking. Working to create a true ecosystem, they farm with no chemicals and have a rotational grazing schedule for a variety of animals on the farm. In the cellar simplicity reigns: slow fermentations with indigenous yeasts and aging is as long as necessary.
