100% Chardonnay from the tiny 0.4 hectare vineyard of Les Pargues, planted on Chabils' classic Kimmeridgian limestone soils. After a manual harvest, the grapes are pressed into stainless steel and ferment with native yeasts. Then aged for a year in old oak barrels before being racked back into stainless steel (à la Roulot) to rest for two months before bottling.
A concentrated and lifted nose of white flowers, ripe lemon, granny smith apple, sea spray and a touch of flinty mineral reduction. There's significant verve and energy on the citrus driven palate, matched by dense, salty mineral concentration and silky textures from oak aging. A 'villages' wine that far outperforms most Premier Cru Chablis.
