A classic Champange blend of Pinot Meunier, Pinot Noir and Chardonnay. All farmed with a mix of biodynamics, agroforestry, and other experimental methods to support vineyard health. The grapes are hand-harvested and ferment separately in a mix of steel tanks and used barrels for 11 months before bottling for secondary fermentation. Aged on the lees for 36 months then disgorged in 2021 with no added sugar.
An effusive nose of fresh cut pears, marzipan, baking spice and brioche, as though walking into a patisserie. More orchard fruit and almond notes can be found on the palate, supported by chalky minerals and striking freshness. The star here is ultimately the stunning tension and complexity as the layers of flavor, body, minerality and concentration all coalesce into a complete, seamless drinking experience. A true wow wine.
