100% Aligoté from Fichet's own vines all within Meursault, planted in 1991, on limestone soils with a bit of clay. The grapes are hand-harvested then fermented and aged in a combination of neutral oak and stainless steel, so as not to impart any 'outside' flavor. Deceptively simple winemaking, yet the end result is anything but.
Energetic and full of verve, the nose dances with Meyer lemon, granny smith apple, jasmine flowers and a touch of iodine minerality. Bright and refreshing on the palate, the wine carry's significant mid-palate concentration, with bold citrus parried by limestone cut and refined texture. This isn't your typical Aligoté, it's flawless white Burgundy.
