100% Chardonnay planted on clay and limestone. This wine sees a very traditional, classic Burgundian èlevage: the hand-harvested grapes are fermented and aged for 12 months in French oak (10% new). Bottled 16 months after harvest.
The wine shines in the glass with aromas of lime, pear, white peach, and a touch of hazelnut. The palate's poise is astounding, balancing dense, salty minerals with bright orchard and citrus fruits. There's an effortless concentration here that can only come from centuries of winemaking experience, coupled with world class terroir.
Francois Carillonis the son of Louis Carillon who was one of the greatest winemakers of all time in Puligny. His eponymous domaine was rivalled only by those ofLeflaiveandSauzetat the time.
Louis' domaine was split equally between his two sons with Francois continuing to make the wines along side his father until 2010 when he began vinifying his own wines. From his very first release Francois' wines have rivaled his father's.
While today Francois wines retain some of his father’s character in terms of their intensity and power, they are also more chiseled and poised. They rely more on the terroir and quality of the fruit than the winemaking. It is a shift that has been seen across the region for some time but it rarely as well executed as it is chez Francois Carillon. Today this estate has, perhaps, surpassed the quality of the father’s and has firmly cemented itself in the top echelon of producers in the region.
