The grandfather plants compelling, dramatic vineyards at some of the highest altitudes in Chablis. The father uses fertilizers, pesticides, and farms for volume rather than quality, producing watery and insipid wines. The son is permitted the youthful impertinence at 26 years of age of abolishing chemicals and farming organically with an eye towards quality rather than volume. The qualitative vision of the grandfather was ultimately realized by the grandson.  

The young and ambitious Thomas Pico of Domaine Pattes Loup has righted the intergenerational see-saw and is growing and vinifying Chablis with an energy, minerality, and vitality that excites me more than I can adequately express. 

If you love deeply nuanced wines with underlying mineral power and persistence, you must pick up a few bottles. Each bottle, each sip, is a revelation. These are impressive wines and unquestionably some of the best Chablis being made today.

Thomas’ villages-level wine is sourced from 60+ year old vines planted on classic Chablisien soils of Kimmeridgian limestone. The hand harvested grapes are hand sorted to insure only pristine grapes are used. Fermented with indigenous yeast and aged for three years in a combination of concrete and stainless steel. No oak. Bottled unfined and unfiltered.   

The nose is concentrated and direct, opening with lemon, chalk dust, crushed oyster shells, and lime zest. The perfectly balanced palate deftly carries immense mineral concentration, deep citrus fruit and precise acidity in a seamless, almost effortless way. More serious and refined than most Premier Crus at a fraction of the cost.
Chablis 'Butteaux' 1er Cru 2018 $94.99 

From one of the top sites in Chablis (including the Grand Crus!): Butteaux, which sits within the famed 1er Cru vineyard of Montmains. The grapes are hand-harvested and carefully sorted before they ferment with ambient yeast. The wine is then racked into large, old French barrels to age for five years before being bottled unfined and unfiltered.  

Beguiling and multi-dimensional aromas of lemon rind, wet rocks, gun flint, petrichor and sea salt. The deeply concentrated and expansive palate is dense and layered with savory citrus, razor sharp saline minerals and mouth coating texture. One of those rare wines that manages to be immense and elegant at once. One of the top Chablis we receive all year. 
Thomas Pico’s Domaine Pattes Loup is quickly becoming one of Chablis' preeminent estates and I believe will soon be spoken of in the same context as Dauvissat and Raveneau. Still in his thirties, he’s already established himself as a meticulous, organic farmer, and an expert, hands-off vigneron. Based in Courgis, a small town in the southwestern corner of Chablis that's renowned for its Kimmeridgian limestone terroir. (Courgis is also home to Monarch favorite Alice & Olivier de Moor!)
